The Winery

Located 500 years from the vineyards, right next to the Château, we make and age our wines under old vaulted caves, digged under the twelve century chapel of the Château. The chapel itself was built on top of a Gallo-Roman temple and its natural water spring. The findings (columns, gods and godess statues and other artifacts) are stored in a Musem in Bourges, 50 km away.

The winery tanks are located on the higher level (ground level). The lower levels contain barrels and are used for wine storage and wine tastings. 

Our wine making process is environmentally friendly to our terroir:

  • Machine harvest, and hand pick harvest for our old vineyards;
  • Pneumatic, low-pressures press;
  • Setting and selection of lies for proper aging;
  • Fermentation with neutral yeast, to let the grapes fully express themselves, maintaining low temperatures in our  tanks (13-18°C) et higher temps in barrels (15-20°C);
  • Final blending before bottling.
